I think this Caesar Dressing might be one of the best Caesar Dressings out there! I created it because I wanted to have something that tasted closer to the original Caesar that I remembered. I have tried quite a few of these dressing recipes, and although they may taste good, they just didn’t taste close enough to my memory of the Caesar Salad I once loved. So, it was up to me to come up with the flavour I was looking for, and eureka, I found it! Not only do I like it, but my family definitely approves!
One of my sisters has been my hardest sell when it comes to trying plant-based meals. She hates the idea of tofu anything, she gags (literally) on the notion of eating any dairy or meat substitute. Getting her to try new recipes of mine has been challenging to say the least. I am not one to force anyone to eat what I cook, (I am now laughing as I type because my girls will tell you otherwise. They will tell you of times when I ask “one scoop or two?” and then when their response is “ONE!”, I always put two!) so I don’t encourage her very often to try anything I’ve made. One summer, at a family BBQ, I made my famous Caesar Salad, and her first response was, “I don’t even like regular Caesar Salad, so no thank you.” I offhandedly told her, “who knows, maybe you might like this one; everyone else seems to love it.” and I walked away. She later confessed that she had tried it and loved it! A win for me! Now, I am always asked to bring my Caesar Salad to all family gatherings!
Garlic – I like to use fresh garlic for that punch of flavour. You can substitute with 2 teaspoons of garlic powder if you don’t have fresh.
Miso paste – Most Caesar Salads have anchovy in them and way back in the day I was a fan. I use miso paste as an anchovy substitute. It does note taste fishy but it gives it that layer of flavour that anchovy lends to the original dressing.
Lemon – I have used both freshly squeezed and real lemon from the bottle and I find that both work well.
Mustard – Dijon mustard has that crisp tart flavour as apposed to regular yellow mustard that is a bit sweet.
Worcestershire Sauce – I used to think that vegan Worcestershire sauce was like unicorns, it did not exist, but one day I found it at my organic grocery and it was a game changer!
Mayo – When I first became vegan there were only 1 or 2 vegan mayo’s out there, and you had to go to a specialty store to buy it. Now, there are so many different brands and even the big companies like Hellmans make a vegan mayo. I like the Hellmans brand and its easy for me to find at my local grocery store.
Vegan Parmesan vs Nutritional Yeast – I like to use Earth Island Parm, to me, Vegan Parmesan really brings home that Caesar taste. Nutritional Yeast is a great substitute but it is milder and your dressing will taste a bit sweeter.
Creamy Caesar Salad Dressing
Ingredients
2 cloves of garlic (minced)
1 tbsp (heaping) miso paste
3 tbsp freshly squeezed lemon juice
2 tsp Dijon mustard
1 tbsp vegan Worcestershire sauce
1 cup mayo
½ cup vegan parmesan or nutritional yeast
¼ tsp black pepper
¼ cup water
Instructions
Whisk together all ingredients thoroughly in a large measuring cup or bowl.
Pour over washed, cut lettuce and sprinkle with faken bits and croutons.
Serve immediately.
Enjoy!
*Tip*
- If you don’t have faken bits, and you still want that smoky bacon flavour, you can add a couple of drops of liquid smoke to the dressing.
